Por lo mismo, diferentes tipos de alimentos que nos ayudan con aportes nutricionales extras como m\u00e1s vitaminas, minerales, antioxidantes, amino\u00e1cidos, fibras y entre muchos otros componentes se han popularizado y ahora forman parte de la dieta cotidiana de muchas personas (Crespo, 2022). Esta tendencia ha tomado diferentes nombres en donde los m\u00e1s reconocidos son los \u201cs\u00faper\u201d alimentos y los alimentos inteligentes. En este art\u00edculo vamos a indagar, y probablemente sorprendernos, con alguno de este tipo de alimentos.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Es importante comenzar destacando que el t\u00e9rmino \u201csuperalimentos\u201d (Superfoods en ingl\u00e9s) no es utilizado por la comunidad cient\u00edfica; en donde, se utiliza los componentes que componen a los alimentos como antioxidantes, vitaminas y prote\u00ednas (Mora, 2023). Por otro lado, los alimentos inteligentes son similares pero contribuyen igual al medio ambiente, como puede ser en la utilizaci\u00f3n de menos recursos o menor cantidad de emisiones durante y despu\u00e9s su producci\u00f3n\u00a0 (Crespo, 2022; Grando et al, 2022). Ambos buscan brindar al consumidor opciones de alimentaci\u00f3n m\u00e1s nutritivas de una manera sostenible y amigable con el medio ambiente.\u00a0<\/span><\/p>\n<p><b>Peque\u00f1as gigantes de los superalimentos: Las bayas<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Para empezar, uno de los superalimentos m\u00e1s conocidos y consumidos alrededor de todo el mundo, las bayas. Estas peque\u00f1as frutas; desde las frambuesas y las fresas, hasta los ar\u00e1ndanos andinos o morti\u00f1os, son una bomba tanto de vitaminas como de antioxidantes (Manganaris et al, 2013). Poseen un alto contenido de carotenoides, lo que les da ese color extravagante, vitaminas y distintos fitoqu\u00edmicos; por lo que, su consumo se ha asociado bastante con una disminuci\u00f3n en problemas de coraz\u00f3n, presi\u00f3n arterial alta y el mejoramiento del sistema inmunol\u00f3gico en el tracto digestivo (Govers et al, 2018). Estas frutas pueden ser consumidas en diferentes presentaciones ya sean como parte de nuestro desayuno, como decoraci\u00f3n de un postre o en batidos. Las bayas son bombas de sabor, vitaminas y antioxidantes.<\/span><\/p>\n<p><b>Un guardi\u00e1n silencioso y ancestral: El ajo<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Muchos lo aman y otros lo detestan, el ajo ha sido una especia utilizada en la cocina desde tiempos remotos. En la \u00faltima d\u00e9cada, estudios han hallado que compuestos bioactivos derivados del ajo, como el trisulfuro de dialilo, tienen un rol importante en la prevenci\u00f3n de diferentes tipos de c\u00e1ncer (Antony &amp; Singh, 2011). El ajo es un condimento ancestral.<\/span><\/p>\n<p><b>Cereales y Granos Andinos en el tiempo: Quinua, Chocho y Amaranto<\/b><\/p>\n<p><span style=\"font-weight: 400;\">La quinua es un tipo de cereal ancestral de origen andino y es considerado uno de los mejores superalimentos en los \u00faltimos a\u00f1os. A pesar de haber sido reemplazada por otro tipo de cereales m\u00e1s populares durante la \u00e9poca de la llegada de los espa\u00f1oles a Am\u00e9rica, la quinoa y sus propiedades de superalimento han continuado al pasar de los siglos y ha sido reconocida en las \u00faltimas d\u00e9cadas (Mujica et al, 2001). La quinua posee una gran concentraci\u00f3n de fibra y prote\u00edna de alta calidad; de igual forma, tiene amino\u00e1cidos esenciales para las personas y una mezcla de vitaminas y minerales como hierro, calcio y potasio. La quinoa es un cereal andino considerado uno de los mejores superalimentos.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">De la mano, otro cereal reconocido por sus s\u00faper propiedades es el amaranto. Este alimento libre de gl\u00faten y de origen vegetal posee grandes cantidades de prote\u00edna, vitaminas, minerales y amino\u00e1cidos (Gobierno de M\u00e9xico, 2015). Pero, lo que hace que destaque el amaranto son sus concentraciones del amino\u00e1cido lisina, pr\u00e1cticamente inexistente en otras prote\u00ednas de origen vegetal, que ayudan a la producci\u00f3n de prote\u00ednas en nuestro cuerpo. Adicionalmente, se ha revelado que estimula y fortalece el desarrollo y actividad de neuronas en nuestro cerebro (Ocho, 2024). El amaranto es un alimento sumamente vers\u00e1til y se puede consumir en sopas o como cereal en los desayunos.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Finalmente, un grano \u00fanico y andino especialmente reconocido en el Ecuador es el chocho (<\/span><i><span style=\"font-weight: 400;\">Lupinus mutabilis) <\/span><\/i><span style=\"font-weight: 400;\">y se caracteriza principalmente por ser una fuente rica de calcio y de prote\u00edna, de hasta el 50%. El chocho es un grano tradicional en pa\u00edses andinos como Ecuador.<\/span><\/p>\n<p><b>Los Revolucionarios Insectos<\/b><\/p>\n<p><span style=\"font-weight: 400;\">S\u00ed, los insectos son considerados superalimentos y han sido el foco de atenci\u00f3n en diferentes partes del mundo. Los <\/span><span style=\"font-weight: 400;\">insectos son consumidos en una dieta cotidiana en el 80% de pa\u00edses de todo el mundo por m\u00e1s de dos billones de personas (Conrad, 2020). <\/span><span style=\"font-weight: 400;\">Es importante mencionar que los insectos destinados a la alimentaci\u00f3n humana pasan por distintos tipos de regulaciones para ser aptos en el mercado. Por lo mismo, los insectos destinados a la alimentaci\u00f3n humana son criados en granjas cerradas y de ambiente controlado las cuales aseguran la higiene y control apropiado de los mismos <\/span><span style=\"font-weight: 400;\">(Bessa et al, 2020; Wang &amp; Shelomi, 2017)<\/span><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Uno de estos insectos son los grillos y por lo mismo, en CRICK utilizamos prote\u00edna\u00a0 de grillo 100% molida para la elaboraci\u00f3n de nuestros deliciosos NACHOS; <\/span><span style=\"font-weight: 400;\">a su vez, nuestra prote\u00edna de grillo 100% molido brinda hasta 65 gramos de prote\u00edna por cada 100 gramos consumidos, ideal para shakes proteicos durante nuestro ejercicio. <\/span><span style=\"font-weight: 400;\">Los grillos pueden<\/span><span style=\"font-weight: 400;\"> llegar a tener hasta 20 gramos de prote\u00edna consumible por cada 100 gramos de grillo (<\/span><span style=\"font-weight: 400;\">Orkusz, 2021)<\/span><span style=\"font-weight: 400;\">; pero, lo que lo diferencia de otras fuentes de prote\u00edna son sus considerables concentraciones de vitamina B12. Esta vitamina ayuda a nuestro organismo en distintas funciones importantes como la s\u00edntesis de ADN; ya que, la misma act\u00faa como un cofactor para dos enzimas vitales en este proceso, la metionina sintasa y la L-metilmalonil-CoA mutasa (NIH, 2024).
