Al mismo tiempo, llevar una alimentaci\u00f3n m\u00e1s consciente y responsable ayuda no solamente con nuestro bienestar personal; sino tambi\u00e9n, con nuestro bienestar mental. Por lo mismo, existen diferentes tipos de alimentos que nos ayudan con aportes nutricionales extras como m\u00e1s vitaminas, minerales, antioxidantes, entre muchos otros y que a la vez poseen menor impacto medioambiental <\/span><span style=\"font-weight: 400;\">(Crespo, 2022)<\/span><span style=\"font-weight: 400;\">. Uno de estos alimentos sorprendentemente son los insectos, los cuales son consumidos en alrededor del 80% de pa\u00edses en una dieta cotidiana\u00a0 (Conrad, 2020). En este art\u00edculo, vamos a explorar los beneficios, probablemente desconocidos para la mayor\u00eda, de diferentes insectos comestibles incorporados a nuestra dieta.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cCri cri&#8221; es un sonido que evoca tranquilidad en las noches o lo escuchamos en momentos en los que se hace un mal chiste. Este peculiar ruido nos introduce al mundo de los grillos, peque\u00f1os insectos conocidos por su caracter\u00edstico canto. \u00c9stos pueden llegar a tener hasta 20 gramos de prote\u00edna consumible por cada 100 gramos de grillo (Orkusz, 2021); pero, lo que lo diferencia de otras fuentes de prote\u00edna son sus considerables concentraciones de vitamina B12. Esta vitamina ayuda a nuestro organismo en distintas funciones importantes como la s\u00edntesis de ADN; ya que, la vitamina B12 act\u00faa como un cofactor para dos enzimas vitales en este proceso, la metionina sintasa y la L-metilmalonil-CoA mutasa (NIH, 2024). Adicionalmente, la vitamina B12 permite mantener c\u00e9lulas saludables y se puede obtener \u00fanicamente mediante prote\u00edna animal <\/span><span style=\"font-weight: 400;\">(O\u2019Leary &amp; Samman, 2010)<\/span><span style=\"font-weight: 400;\">.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">De igual forma, los grillos brindan <\/span><span style=\"font-weight: 400;\">9 de los amino\u00e1cidos esenciales que requerimos los cuales son: leucina, isoleucina, valina, metionina, tript\u00f3fano, treonina, lisina, histidina y fenilalanina y solamente podemos adquirirlos mediante nuestra dieta al no poder sintetizarlos naturalmente (Stone, Tanaka &amp; Nickerson, 2019). Los grillos poseen altos niveles de prote\u00edna y otros nutrientes.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Por otro lado, los insectos se han caracterizado en poseer mayores cantidades de minerales necesarios en nuestra dieta a comparaci\u00f3n a la carne de res; donde, los insectos se pueden utilizar para satisfacer dietas que son pobres en calcio, zinc, hierro, magnesio y potasio (Guin\u00e9 et al, 2021; Kim et al, 2019).<\/span><span style=\"font-weight: 400;\"> A su vez, insectos en su estado de larva, como es el caso de <\/span><i><span style=\"font-weight: 400;\">Tenebrio molitor, <\/span><\/i><span style=\"font-weight: 400;\">brindan a nuestra dieta diferentes vitaminas como la vitamina E, que act\u00faa como antioxidante al capturar radicales libres que da\u00f1an nuestras c\u00e9lulas y la vitamina A, que ayuda a mantener la salud de diferentes tejidos \u00f3seos y blandos (Conrad, 2020; Orkusz, 2021).\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Adicionalmente, diferentes estudios han demostrado que los insectos poseen propiedades antidiab\u00e9ticas, ayudan a controlar la presi\u00f3n arterial y disminuyen la glucosa en la sangre. Por ejemplo, en Corea del Norte se ha utilizado gusano de seda en polvo para tratar a pacientes con diabetes y estudios similares se est\u00e1n llevando a cabo en pa\u00edses asi\u00e1ticos como China (<\/span><span style=\"font-weight: 400;\">Kim et al, 2019)<\/span><span style=\"font-weight: 400;\">. A pesar de que se han encontrado estas propiedades y diferentes compuestos en la composici\u00f3n de los insectos, m\u00e1s investigaci\u00f3n es necesaria acerca de los efectos que el consumirlos pueda tener en nuestra salud y se recomienda siempre consultar previamente con un m\u00e9dico (Han et al, 2017).\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Finalmente, el consumo de los insectos posee un menor impacto medioambiental a comparaci\u00f3n de la prote\u00edna animal. Por ejemplo, las granjas de ambiente controlado en donde los insectos crecen requiere menos \u00e1rea ya que se tratan de granjas verticales, permitiendo un ahorro no solamente en el espacio pero de igual forma en los recursos necesarios para su funcionamiento como el agua.
