Adem\u00e1s, estos insectos son consumidos en una dieta cotidiana en el 80% de pa\u00edses de todo el mundo por m\u00e1s de dos billones de personas (Conrad, 2020). La entomogafia consiste en el consumo de insectos<\/span><\/p>\n<p><span style=\"font-weight: 400;\">En primer lugar tenemos a los escarabajos ( del \u00f3rden Coleoptera), estos peque\u00f1os insectos conocidos como catzos en el Ecuador abarcan hasta el 31% de insectos consumidos en el mundo, generalmente en su estado de larvas, posicion\u00e1ndose en el primer puesto de la entomogafia (alimentaci\u00f3n a base de insectos) (Jimini\u2019s, s.f; Prado, Torres &amp; Vaddadi, 2022). Generalmente son consumidos en su estado de larva como el <\/span><i><span style=\"font-weight: 400;\">Tenebrio molitor <\/span><\/i><span style=\"font-weight: 400;\">o mejor conocido como gusano de la harina e incluso el famoso \u201cchontacuro\u201d (<\/span><i><span style=\"font-weight: 400;\">Rhynchophorus palmarum<\/span><\/i><span style=\"font-weight: 400;\">) de Ecuador, antes de que contin\u00faen con su proceso de convertirse en escarabajos adultos (Prado, Torres &amp; Vaddadi, 2022) . En pa\u00edses como Australia y Estados Unidos se consumen orugas.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">En el tercer lugar del podio, con alrededor del 14% de insectos consumidos en el mundo tenemos a las peque\u00f1as hormigas (del \u00f3rden Hymenoptera). \u00c9stas poseen sabores \u00fanicos y diferentes dependiendo del tipo de hormiga. Por ejemplo, la <\/span><i><span style=\"font-weight: 400;\">Myrmelachista schumanni <\/span><\/i><span style=\"font-weight: 400;\">mejor conocida como hormiga de lim\u00f3n, tiene justamente un sabor \u00fanico a lim\u00f3n debido a su mecanismo de defensa contra predadores; donde, expele este sabor desagradable para sus depredadores naturales (Prado, Torres &amp; Vaddadi, 2022). Las hormigas proveen alrededor de 14g de prote\u00edna por cada 100g y su consumo ayuda a la regulaci\u00f3n de colesterol y presi\u00f3n arterial, debido a su bajo contenido en calor\u00edas (Conrad, 2020). Adem\u00e1s, en pa\u00edses como Brasil y Francia, las hormigas son consideradas un plato gourmet y son empleadas generalmente como toppings en la comida; a su vez, en la amazon\u00eda del Ecuador la hormiga de lim\u00f3n puede ser disfrutada tanto por locales y turistas.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Finalmente, llegamos a nuestros favoritos y consentidos en CRICK, los grillos (del \u00f3rden de los ort\u00f3pteros). Con un consumo en todo el mundo de alrededor del 13%, estos insectos son una gran fuente de prote\u00edna con un sabor neutro o de nueces dependiendo su alimentaci\u00f3n (Jimini\u2019s, s.f; Prado, Torres &amp; Vaddadi, 2022). El grillo, no solamente posee altos niveles nutricionales y proteicos; tambi\u00e9n, tiene vitaminas y amino\u00e1cidos necesarios para nuestras dietas (Hopkinson, 2017; <\/span><span style=\"font-weight: 400;\">O\u2019Leary &amp; Samman, 2010<\/span><span style=\"font-weight: 400;\">). Recientemente, estudios han revelado que una dieta en donde se incluyen grillos, beneficia la microbiota intestinal y reduce la inflamaci\u00f3n <\/span><span style=\"font-weight: 400;\">(Stull et al, 2018).<\/span><span style=\"font-weight: 400;\"> Adicionalmente, la prote\u00edna proveniente de grillo es absorbida adecuadamente por nuestros cuerpos, <\/span><span style=\"font-weight: 400;\">entre el 69-84% seg\u00fan el \u00edndice PDCAAS, muy por cerca a la prote\u00edna proveniente de ganado (Poelaert et al, 2018). Por lo mismo, los grillos usados en esta industria son criados en granjas cerradas y de ambiente controlado las cuales aseguran la higiene y control adecuado de los insectos <\/span><span style=\"font-weight: 400;\">(Bessa et al, 2020; Wang &amp; Shelomi, 2017)<\/span><span style=\"font-weight: 400;\">. Adem\u00e1s, a pesar de que el consumo de insectos ha estado en el ojo estos \u00faltimos a\u00f1os, cabe mencionar que algunas personas pueden presentar alergias a este tipo de alimento (Gould, 2013). Generalmente, las personas que ya son al\u00e9rgicas a los mariscos van a tener reacciones similares al consumir insectos. Esto se debe a que ambos poseen contenido de compuestos como tropomiosina o arginina quinasa, ligados a causantes de las reacciones al\u00e9rgicas (Bessa et al, 2021; FAO, 2013).
