{"id":5805,"date":"2024-06-05T23:02:13","date_gmt":"2024-06-06T04:02:13","guid":{"rendered":"https:\/\/cricksuperfoods.com\/?p=5805"},"modified":"2024-06-05T23:02:13","modified_gmt":"2024-06-06T04:02:13","slug":"el-mundo-de-la-entomofagia-son-los-insectos-realmente-nutritivos","status":"publish","type":"post","link":"https:\/\/cricksuperfoods.com\/en\/el-mundo-de-la-entomofagia-son-los-insectos-realmente-nutritivos\/","title":{"rendered":"El mundo de la entomofagia: \u00bfSon los insectos realmente nutritivos?"},"content":{"rendered":"<p>Escrito por Andres Ortiz<\/p>\n<p><span style=\"font-weight: 400;\">La entomogafia ha estado en el ojo p\u00fablico en la \u00faltima d\u00e9cada, ya no solamente por su exoticidad, sino tambi\u00e9n como una alternativa sostenible a los problemas de seguridad alimentaria que el incremento de la poblaci\u00f3n y demanda de consumo generan <\/span><span style=\"font-weight: 400;\">(Stone, Tanaka &amp; Nickerson, 2019). <\/span><span style=\"font-weight: 400;\">Los insectos ya son consumidos en una dieta cotidiana en el 80% de pa\u00edses de todo el mundo por m\u00e1s de dos billones de personas (Conrad, 2020); <\/span><span style=\"font-weight: 400;\">pero, \u00bfSon realmente nutritivos? \u00bfTraen mayores beneficios? \u00bfSon realmente sustentables? En\u00a0 este art\u00edculo vamos a entender y responder todas estas preguntas acerca de los insectos.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Primeramente, se ha demostrado que los los insectos poseen grandes cantidades de prote\u00edna y mayores concentraciones de minerales necesarios en nuestra dieta a comparaci\u00f3n a la carne de res; donde, los insectos se han utilizado para satisfacer dietas que son pobres en calcio, zinc, hierro, magnesio y potasio (Guin\u00e9 et al, 2021; Kim et al, 2019). Por ejemplo, las larvas de escarabajos permitidas para el consumo humano como es el caso de <\/span><span style=\"font-weight: 400;\">\u00a0<\/span><i><span style=\"font-weight: 400;\">Tenebrio molitor, <\/span><\/i><span style=\"font-weight: 400;\">brindan hasta un 50% de prote\u00edna si son deshidratadas junto con diferentes vitaminas como la A y la E que aseguran la salud de nuestros tejidos \u00f3seos y blandos (Conrad, 2020; Orkusz, 2021). Igualmente, insectos como las hormigas, proveen alrededor de 14g de prote\u00edna por cada 100g y su consumo ayuda a la regulaci\u00f3n del colesterol y presi\u00f3n arterial, debido a su bajo contenido en calor\u00edas y algunas de ellas tiene sabores peculiares como lim\u00f3n (Conrad, 2020; Prado, Torres &amp; Vaddadi, 2022).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Sin embargo, un insecto que sobresale son los grillos; ya que,<\/span><span style=\"font-weight: 400;\"> \u00e9stos pueden<\/span><span style=\"font-weight: 400;\"> llegar a tener hasta 20 gramos de prote\u00edna consumible por cada 100 gramos de grillo y es absorbida adecuadamente por nuestros cuerpos, <\/span><span style=\"font-weight: 400;\">entre el 69-84% seg\u00fan el \u00edndice PDCAAS, muy por cerca a la prote\u00edna proveniente de ganado (Orkusz, 2021; Poelaert et al, 2018)<\/span><span style=\"font-weight: 400;\">. Pero, lo que lo diferencia de otras fuentes de prote\u00edna e insectos son sus considerables concentraciones de vitamina B12 llegando a superar a las del salm\u00f3n. Esta vitamina ayuda a nuestro organismo en distintas funciones importantes, como la s\u00edntesis de ADN, permitiendo mantener c\u00e9lulas saludables y se obtiene \u00fanicamente por el consumo de prote\u00edna animal <\/span><span style=\"font-weight: 400;\">(O\u2019Leary &amp; Samman, 2010)<\/span><span style=\"font-weight: 400;\">. El grillo posee altas cantidades de prote\u00edna y otros nutrientes.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">De la mano con todos los beneficios nutricionales y bienestar que nos brindan los insectos, la crianza y cuidado de los mismos tiene un menor impacto medioambiental en comparaci\u00f3n a otras industrias; ya que, se generan emisiones de gases de efecto invernadero hasta 10 veces por debajo de la industria ganadera <\/span><span style=\"font-weight: 400;\">(Payne et al, 2015).
